Hey guys! Today I am going to try to turn a watermelon into vegan tuna! Yup, watermelon tuna, you heard that correctly. I am going to attempt to show you how to make basic vegan nigiri, vegan sashimi, and spicy tuna rolls! This recipe is perfect for a fancy dinner party, when you really want to WOW your guests.

1 pound watermelon
Drizzle of olive oil
Salt to sprinkle
Preheat the oven to 180°F.
Cut the skin of the watermelon. Slice the watermelon into a rectangular block then slice it into one-inch thick slices.
Lay the watermelon out on a parchment, or baking mat-lined baking sheet.
Cook the watermelon for 2 to 2½ hours, flipping once, until shrunken and soft.
To create Spicy Sushi Rolls
1 Tbsp vegan mayo
1 tsp Sriracha hot sauce
¼ cup water
1 Tbsp rice vinegar
1 Tbsp Sriracha sauce
½ tsp sesame oil
3 green onions, sliced into rounds
sushi rice (recipe above)
2 nori sheets, cut in half crosswise
3 Tbsp white sesame seeds, toasted
